Shovel & Fork

By Valerie Lugonja

Chef Chad Moss and Kevin Kossowan

Shovel & Fork is a business that grew out of a friendship in response to sustainable food activities Kevin and Chad were engaged in to provide for their own families and through their generous volunteer spirits. The demand for their expertise and opportunity to engage participants in what they love to do became so acute that the business was begged to be born.

“Shovel & Fork came to be at a time that was ripe for engaging folks in workshops to learn about doing things themselves in the world of food, and has become way more since - now delving into various projects with large institutions, including schools, not for profits, Canadian chefs, and other cool folks in the scene.”

There is no office. No kitchen. Have keen mind, bag packed and a truckload of personal skills and these two can be found anywhere around the province and country hosting, teaching, touring, cooking, farming and foraging.

The purpose of Shovel & Fork, the very essence of their business model is to “teach traditional food skills that enable folks to reinvent their food system.”

Shovel & Fork have a cult following in the city and throughout Northern Alberta are revered by everyone in the local food community. Gaining notoriety throughout Alberta, and across Western Canada, this young team is indefatigable: consistently on the cutting edge of what is new and happening in the world of local, sustainable, accessible and possible food preservation, acquisition and security.

Chad’s a red seal chef with a background in culinary education in Australia, and now, Canada. Kevin produces food videos/TV and practices urban farming when not facilitating workshops for people to learn about foraging, hunting, fishing, butchering, preparing, preserving, cooking, baking and just about any other “ing” that encompasses food.

Classes such as butchery, charcuterie, gardening, cob oven building, cidermaking, ice fishing, and cheese making can be found listed on their website. Check it often, or sign up for notifications of new class listings as they sell out fast.
