Brewsters’ central brewery is located in Calgary’s Foothills industrial park of and opened in 2003. Brewmaster Rob Walsh relocated from Edmonton, where he worked at the Oliver Square brewery, to help with the opening of the this brewery. The brewery has evolved greatly over the years yearly improvements to increase production capacity. A further brewery expansion and equipment upgrade is in the planning stages for the coming year. Brewsters Foothills brewery produces the majority of the regular beers found on tap at Brewsters locations as well as many seasonal beers throughout the year. In the course of a year, the Foothills brewery produces between 25-30 different beers. A former quality control and laboratory supervisor for Heineken, Medhat Yacoop joined the Brewsters team in 2012 as a Quality Control Manager, setting up the brewery’s first laboratory. Medhat tests the quality and consistency of all Brewsters’ beers at every step of the brewing process to ensure only the cleanest, freshest tasting beer is produced.
Brewsters believes that every beer should share a story and every story should share a beer. When it comes to Brewsters, the beer is their story and their restaurants are the stage. Michael Lanigan founded Brewsters in 1989, way before small-batch brewing was the trend it is today. Now, as a second-generation family business, their batches aren’t as small as they once were, but the idea that got them started is the idea that still drives them today. It’s a pretty simple formula – combine beer that’s brewed with passion with an outstanding dining experience. One of Alberta’s longest standing local breweries, Brewsters has grown from its original brewpub location in downtown Calgary to 11 locations throughout the province.
Brewmaster Robert Walsh has been with Brewsters since 1995. He believes in using the best ingredients in the world, including the finest Alberta grains, and pushing the limits of new, innovative ideas in brewing. Brewsters uses Alberta barley as the base malt in all of its beers.
Brewsters’ beer is produced by 2 breweries: its central brewery in the Foothills industrial area of Calgary and a smaller brewery specializing in seasonal and rotational beers in its Edmonton Oliver Square location. Brewsters offers a lineup of 16 beers on tap at all times, including 13 full time beers and 3 seasonal beers. For over 20 years, Brewsters beer could only be sold in its restaurant locations as a result of its brewpub classification, but a recent policy change granted Brewsters the opportunity to sell its beer to other retail establishments. As of September 2014, Brewsters beer can now be found at numerous liquor stores throughout the province.
All Brewsters restaurants allow minors and offer a beer-friendly menu highlighting many local products, that transcends the label of pub food.
