Sean Cutler

Kensington Riverside Inn - Chef's Table

Calgary

Born and raised in Calgary, Cutler is a graduate of SAIT Polytechnic’s prestigious professional cooking school. He worked as a chef for seven years at the Calgary Golf and Country Club under Executive Chef Vincent Parkinson’s direction. Most recently, he was the Chef de Cuisine at Heritage Park’s Selkirk Grille, where he first began working with Executive Chef Jan Hansen, Executive Chef of the Hotel Arts Group.

Sean joined the Chef’s Table team in Winter 2016 with a view of introducing Canadian Regional Cuisine to the menu. “I want to break away from the suit and tie approach to Chef’s Table”, he says. “I want people to see this place as somewhere that’s more approachable for everyone, without losing sight of that style of service and quality.”

Since his arrival, Sean has launched new menus for Chef’s Table – one style for the restaurant itself and one for the lounge/patio with happy hour offerings including a popular Flights & Bites featuring house-made charcuterie paired with flights of wines. The menus are more focused on locally sourced, regional ingredients and suppliers. Chef Sean proclaims: “I want to explore the roots of Canadian cuisine and how we can put our own interpretive stamp on it.”

Sean has been active with ACTA for several initiatives including working with Pulses Alberta on their visit to the Agri-Food Processing Facility in Leduc as well as participating in the Taber Pheasant Festival. He has also played a supporting role with the Famous 5’s Taste of Famous Gala as well as the Beakerhead Festival.
