Mark started cooking at home and was always watching the Food Network. Mark started washing dishes in high school and has been cooking off and on ever since. Starting as a line cook in a pub, Mark worked his way through NAIT’s apprenticeship program while working his way up ranks at Hundred Bar & Kitchen. Now the Sous Chef, Mark enjoys butchering whole animals, making Charcuterie, and learning new techniques.
