With no formal training or cooking school under his belt, Justin spent the early part of his career working under some of the most talented chefs in the world, in the most prestigious kitchens – from Daniel in NYC, French Laundry in California, to Waterloo House in Bermuda, just to name a few.
Moving to Calgary in 2007, Justin opened the most highly anticipated restaurant in Calgary at the time – Rush, a very formal fine dining establishment. A far cry from his true nature, Justin moved on to open Model Milk in September of 2011. A huge departure from the concept at Rush, Model Milk’s cuisine is a true reflection of his personality: creative, simple, and innovative – a return back to the basics. Justin has helped land Model Milk on nearly every major restaurant award list in Canada and is also the recipient of the coveted 2013 Pinnacle Award for Canadian Chef of the Year. Along with being a judge for the Hawksworth Young Chef Scholarship fund, he is now the Chef Ambassador for Grow Calgary – Canada’s largest urban agricultural farm growing fresh produce for the Calgary Food Bank.
