Lindsay Porter

El Cortez Mexican Kitchen + Tequila Bar

Edmonton

Born and Raised in St Albert, Executive Chef Lindsay Porter’s focus has always been on the culinary world, even as a child. This passion for the culinary arts reflects through her re-designed menu at El Cortez Mexican Kitchen + Tequila Bar “From the colours, to the flavors, to the textures, this menu really is my form of expression. I wanted to have fun with it, so I took several traditional recipes, and added my personality to them.”

Formerly of 4th and Vine and Mercer’s Catering, and recent bronze medalist at the prestigious Gold Medal Plates Edmonton in 2014, Chef Porter graduated in 2006 after completing a two-year, fulltime culinary course. While at school, she apprenticed under chef Willie White at the River House Grill where she learned the basic fundamentals of restaurant fine dining.

After graduating, she travelled to Europe for two months and explored the culinary world of Italy, Switzerland, France, Greece, Germany and the Netherlands. Once home, she joined Fantasyland Hotel as a sous chef for 4 years before becoming the executive chef at 4th and Vine; she began taking part in various competitions, such as the Chaine des Rotisseurs Junior Commis Competition, placing first in the regionals twice and travelling to Vancouver and Montreal for nationals. Porter has also competed in the CCFCC Junior Chef Challenge and CCFCC National Challenge.

This year, Chef Porter will be competing in the Canadian Food Championships in both the seafood and pasta category and will be returning to compete in Gold Medal Plates 2015 in the fall.
