Pampa Brazilian Steakhouse

Chef Joao Dachery is the Executive Chef of Pampa Brazilian Steakhouse, specializing in churrasco, also known as Brazilian barbeque. Chef Joao’s passion and culinary roots for cooking regional, authentic Brazilian food didn’t seem to fit in Alberta’s culinary landscape until he started discussions with now-owner Oscar Lopez about the absence of this cuisine in Edmonton. In 2011, they opened the first Pampa Brazilian Steakhouse in Edmonton, followed by a second location recently opened in Calgary in 2015. Chef Joao’s roots from growing up in Southern Brazil is truly evident in the dishes at Pampa, with a minimalistic yet traditional approach to his cooking. Pampa’s Rodizio-style service enhances the experience as Chef Joao wants to offer guests something a little different than a typical steakhouse. With the tastes of Southern Brazil, he ensures that the freshly cut meats are grilled to perfection, seasoned minimally so the natural flavour of the meat enhances the taste. He’s also developed a variety of accompaniments that are made with simple ingredients and can cater to almost any palate. For Chef Joao, the quality of the food is the most important part of making a meal enjoyable and a dining experience memorable.
